This is so yummy...enjoy!
3 eggs
1 c sugar
1/3 c water
1 t vanilla
1 t baking powder
1/4 t salt
7/8 c flour
Beat eggs for 5 minutes until thick, gradually beat in sugar on low, then add water and vanilla. Gradually add dry ingredients beating until smooth. Grease and flour cookie sheet, spread batter evenly and bake at 375 for 12-15 minutes. Loosen edges and dump cake onto towel sprinkled with powdered sugar. Roll and let cool. Unroll and spread with filling, re-roll and refrigerate or freeze.
Filling:
1 (8oz) cream cheese softened
1/2 c powdered sugar
1/8 t almond extract
1 c diced strawberries

And yummy it was! I tried something like this with ice cream inside once. I never tried it again...guess that tells the story, huh?
